Simple Scallion Pancake
Flaky scallion pancakes from a soft hot-water dough, rolled thin with scallions, salt, and sesame seeds, then rolled up and griddled into layered, savory spirals.
Instructions
- 1

Add high-gluten flour to 60°C hot water, stirring as you add.
- 2

Stir into a flocculent state.
- 3

Use your hands or a scraper to knead into a slightly soft dough, and let it rest for 30 minutes.
- 4

Lightly grease the cutting board with some cooking oil, press the rested dough into a cake shape, and spread a little cooking oil on it.
- 5

Roll out the dough into a rectangular sheet.
- 6

Sprinkle a little salt, chopped green onions, and white sesame seeds, then roll up from bottom to top.
- 7

Pinch the closing edge tightly, shape it into an even long strip, and fold it into two sections.
- 8

Slitting.
- 9

Roll them up separately, pressing the ends underneath the dough.
- 10

Place it on a flat plate, cover with a plastic wrap, and refrigerate overnight.
- 11

Take it out in the morning and roll it into thin pancakes.
- 12

Preheat the electric griddle, heat both sides, and cook for about 3 minutes.
- 13

Just take it out and cut it into pieces.
- 14

The second way to eat it is to flip it over after heating for another minute and crack an egg onto it.
- 15

Beat the eggs and sprinkle in the diced ham.
- 16

Flip over after setting.
- 17

Spread your favorite sauce.
- 18

Roll up, OK.
- 19

It tastes even better with porridge.
- 20

The original flavor is also delicious.
