Simple sweet and sour - radish sticks
White radish, carrot, and turnip sticks are kneaded with sugar and salt until juicy, then splashed with vinegar for a sweet-sour crunch. Simple pantry pickling at its most cheerful.
Instructions
- 1
These are the prepared vegetables: half a white radish, two carrots, and a small half of a white cabbage.
- 2
Cut the white radish and carrot into small strips. Don’t make them too thin. Break the cabbage into small pieces.
- 3
Pour in the sugar and salt, and knead forcefully. Squeeze out the moisture from the vegetables.
- 4
Comparing with Figure 2, you'll find that the vegetables shrink a lot as the water comes out. At this point, add vinegar. I didn't have white vinegar at home, so I used apple cider vinegar. The taste is also pretty good.
- 5
Mix the vegetables with vinegar evenly. Cover with plastic wrap. This is to let the vegetables release more water. This process takes one day.
- 6
This is a dish that has been left out overnight. The liquid basically covers the vegetables. At this point, it can be taken out and eaten.
- 7
During the cooking process, be sure to taste it from time to time. Everyone likes different levels of sweet and sour, so you can adjust accordingly. The broth with some ginger is also very good for this dish.
