Single Serving Lunch - Red Oil Noodles
Wide wheat noodle sheets rehydrated in boiling water and tossed with the included red chili oil sauce, topped with cucumber shreds, cilantro and boiled egg for a quick, spicy, tangy single-serving lunch.
Instructions
- 1

Buy one pack of ready-made red oil noodles (it contains a seasoning packet).
- 2

Put an appropriate amount of water in the pot, bring it to a boil, then put the noodles in and slowly stir them with chopsticks, then soak for 5 minutes.
- 3

While soaking, prepare the green vegetables, cilantro, and cucumber by washing them. My cucumber is very small; for a large one, you can use half or a third of it.
- 4

Julienne the cucumber, cut the cilantro into sections, and peel the eggs.
- 5

After a few minutes, take out the noodles.
- 6

Add the cucumber strips and cilantro.
- 7

Add the seasonings from the seasoning packet; you can put in all of the vinegar. Add the chili oil and powder packet according to personal taste.
- 8

Mix well.
- 9

Plate the dish.
- 10

Just add the peeled eggs. You can cut the eggs to make it look nicer, but I was lazy and just put them in whole.
