Skillfully Pickled Chinese Toon
Briefly blanched toon shoots lose all bitterness while their aroma deepens, then marinate in plain salt, preserving the signature flavor of spring for the months ahead.
Instructions
- 1
Remove the stems and any bad leaves from the fresh Chinese toon, and wash it clean with water.
- 2
Put water in a pot and bring it to a boil, add fresh Chinese toon and blanch for 1 minute, then immediately remove. After blanching, the fresh Chinese toon will have no bitterness, and its flavor will be stronger.
- 3
Rinse the blanched Chinese toon with cold water, then drain the water.
- 4
Place the well-drained toon buds into a stainless steel bowl without oil or water, sprinkle with salt, and mix evenly. Marinate for 24 hours.
- 5
Place the marinated Chinese toon into a clean container and put it in the refrigerator. It can be used for wontons, noodles, etc.
