Sliced Pork with Garlic Sauce
A classic Sichuan-style cold platter where silky poached pork belly is sliced paper-thin and luxuriates under a bold sauce of pounded garlic, soy, and chili oil.
Instructions
- 1
Ingredients preparation: pork belly, garlic, cucumber (forgot to take a photo 🤣).
- 2
Put the pork into cold water, add cooking wine and ginger slices; the meat will become more fragrant and tender when cooked this way. Bring the water to a boil, skim off the foam, then reduce to low heat (keeping it slightly simmering) and cook until a chopstick can easily go through the whole piece of meat and no blood seeps out when the chopstick is removed. At this point, the meat is done.
- 3
Put the cooked pork belly into ice water to soak.
- 4
Cut the soaked meat into thin slices, try to cut them as thin as possible, so the texture is not greasy at all.
- 5
Prepare a cucumber, cut off both ends, slice it thinly, organize the slices after cutting, stack them all together, and then cut them in half from the middle.
- 6
Take a slice of meat, then take a slice of cucumber, and then stack them together and fold it in half.
- 7
Prepare the sauce: Mince the garlic and ginger, put them into a bowl after chopping, add chili powder, white sesame seeds, salt, 2 tablespoons of light soy sauce, 1 tablespoon of fragrant vinegar and oyster sauce. You can add more sesame oil and chili oil, then stir the sauce evenly and set aside.
- 8
After it's done, place it on a plate, then drizzle some of the sauce over it. This delicious garlic pork is ready, with a fragrant meat aroma, rich garlic flavor, and a taste that is savory without being greasy.
