Slippery Meat Soup
A signature smooth meat soup: thin pork neck slices kneaded with water and starch paste turn slippery and bouncy, poached in broth for a tender, silky, comforting bowl.
Instructions
- 1

Fresh pork neck meat.
- 2

Cut into thin slices 5 millimeters thick.
- 3

Use your hands to knead and slap the meat in water three times to make it fully absorb the water.
- 4

Add salt, chicken essence, baking soda, sugar, egg white, light soy sauce, sweet potato starch, and oil, then mix well and marinate for later use.
- 5

Take about 40 grams of sweet potato flour, and use boiling water to gradually mix it with chopsticks into a slightly thick paste.
- 6

Put the paste into the marinated pork and mix it evenly, so that each piece of pork is evenly coated with the paste, then let it sit for about 20 minutes.
- 7

Put an appropriate amount of water in the pot and bring it to a boil. Put the pieces of pork into the pot one by one, and after they are cooked and set, take them out and cool them.
- 8

When you want to eat, put the broth into the pot and bring it to a boil, cook the sliced meat until done, season it and serve, sprinkle some chopped green onions and it's ready.
