Small elbow pork dipped in exclusive ten-spice cilantro garlic sauce
Hand-rolled pork elbow roulades are marinated overnight, tied with string and sliced thin, served with a rustic mortar-pounded dip of garlic, cilantro and ten aromatics for dipping.
Instructions
- 1

Braised chicken drumsticks and boneless pork forelegs. (For detailed instructions, see the homepage)
- 2

Marinated overnight.
- 3

Remove some of the lean meat slices so they will be easier to roll later.
- 4

I originally wanted to roll just one, but rolled up this way it's too thick. Splitting it in the middle can make two small pork elbow flowers.
- 5

Take half and place it on the plastic wrap.
- 6

Roll tightly from bottom to top.
- 7

Tie it with a rope.
- 8

Tightly roll the other half as well.
- 9

Place the two prepared small pork elbows in the refrigerator overnight.
- 10

Open when eating.
- 11

Cut into even slices.
- 12

Plating.
- 13

Put the cilantro and garlic into a garlic mortar, and add a little salt.
- 14

Pound clay.
- 15

Season with an appropriate amount of salt, light soy sauce, rice vinegar, sesame oil, and spicy red oil.
- 16

Finished product.
