Small four rolls
Small four rolls made with low-gluten flour, egg and milk, baked until light, fluffy and golden. Great for beginners and experienced home cooks alike.
Instructions
- 1

Stir the milk and oil until there are no oil specks, emulsifying.
- 2

Add 4 egg yolks and mix well.
- 3

Sift in the low-gluten flour and stir evenly in a Z-shaped motion.
- 4

When it reaches a flowing consistency, the egg yolk mixture is ready.
- 5

Add the sugar in three batches to the four egg whites, add a little lemon juice, and whip until soft peaks form.
- 6

Egg yolk batter and meringue.
- 7

Take 1/3 of the meringue and add it to the egg yolk mixture, folding it in evenly or using a cutting-style fold (do not stir in circles).
- 8

Pour all the mixed batter into the remaining egg whites, and fold evenly or use a cutting motion to mix until uniform. Similarly, do not stir in circles to avoid deflating the mixture.
- 9

Pour the cake batter into the baking pan and level it by shaking.
- 10

Place it in the preheated oven at 155°C on the middle rack and bake for 20 minutes (adjust the time and temperature according to your oven's characteristics).
- 11

Flip it over and let it cool.
- 12

Roll it up with a rolling pin and put it in the refrigerator for half an hour to set.
- 13

After the time is up, cut into pieces.
- 14

Alright.
