Smooth and Tender Pork Skin Jelly
A silky pork skin jelly given a pretty pink swirl from dragon fruit powder, proving that traditional aspic can be playful too.
Instructions
- 1

Rinse the pork skin, then boil it in a pot for 10 minutes. Repeatedly scrape off the fat from the inner side and the outer skin, rinse clean, and boil for another 5 minutes.
- 2

Clean the pork skin and cut it into shreds (this can make 2 to 3 servings).
- 3

Take an appropriate amount of pork skin strips, add scallions and ginger, and steam for 40-50 minutes.
- 4

Remove the steamed pork skin.
- 5

Mix an appropriate amount of red dragon fruit powder with water.
- 6

Pour the pigskin into the mold, add the red hot powder juice and stir evenly, allowing it to set naturally or refrigerate it in the fridge.
- 7

The congealed pork jelly is firm and elastic, and you can first trim off the four edges.
- 8

Cut the pork skin into strips and arrange them on a plate. The pale pink color of the pork skin jelly looks appealing, with enough elasticity and a smooth, pleasant texture.
