Snow Fungus Black Chicken Soup
A nourishing black chicken soup with snow fungus, dried conch slices, red dates, and goji, simmered long so the broth turns mellow while the fungus lends silken body.
Instructions
- 1

Soak the white fungus.
- 2

Rinse the conch slices and soak them in water until soft. (Keep the soaking water for later use.)
- 3

Remove the skin from the black chicken and chop it into large pieces.
- 4

Blanch the black-bone chicken and sliced conch. (Put them in cold water, and cook for 2-3 minutes after the water boils.)
- 5

Wash off the foam from the black-boned chicken.
- 6

Cut the conch slices into small pieces.
- 7

Remove the pits from the red dates.
- 8

Goji berries
- 9

Remove the stems from the snow fungus, tear it into small pieces, put them into the soup pot, and pour in the water used to soak the sea snails along with an appropriate amount of clean water. (I use an electric pressure cooker).
- 10

Add the other ingredients, cover with the lid, and press the soup button to start cooking.
- 11

After the pot is done venting, you can open the lid and skim off the fat. (The conch slices are salty, so you may skip adding salt.)
- 12

Clear and moistening, nourishing yin.
