Sour and Spicy Pickled Vegetables
Shredded brined mustard root, rinsed to soften its salt, is tossed with sizzled dried-chili oil for a sour, fiery kick.
Instructions
- 1

Pickled mustard greens (salted vegetables) are peeled and washed, then cut in half and soaked in water for two hours.
- 2

Prepare the dried chili peppers and cut them into small sections.
- 3

Set fire to burn oil.
- 4

When the oil reaches about 70% heat, add the dried chili peppers (stir constantly during the process to prevent the chili peppers from burning).
- 5

Fry the chili until fragrant and transfer it to a container to cool.
- 6

Cut the soaked pickles into shreds.
- 7

Rinse the shredded pickles again to remove some of the salt.
- 8

Place the washed salted vegetable shreds into a container, add the fried chili oil and aged vinegar, and mix evenly.
- 9

Plating completed.
