Sour Long Beans with Rice Washing Water

Sour Long Beans with Rice Washing Water

Rich, starchy rice-washing water stands in for a traditional ferment starter here, submerging whole long beans with a little sugar and salt so they sour naturally within about a week.

Instructions

Rub the rice a little, the rice washing water should be as thick as possible.

Add the rice water, making sure it covers the cowpeas.

The color becomes very dark after a week, and the longer it soaks, the more sour it gets.

The color is very beautiful and appetizing 😄.
