Southeast Asian Curry Seafood Soup
A Southeast Asian curry seafood soup where curry paste is bloomed in hot oil, then simmered with shrimp, clams, and enoki mushrooms into an aromatic, golden-spiced broth brimming with ocean sweetness.
Instructions
- 1
Prepare all the necessary ingredients. The quantities of food in the ingredients are just for Xiao Mei’s reference for everyone, so you can adjust as you like! Xiao Mei was worried in advance that there might be sand when cooking the clams in water, so feel free to handle it as you wish.
- 2
Use a clean pot and add oil and curry (you can add a bit more if desired).
- 3
Add water and bring to a boil, then add the shrimp and enoki mushrooms (if the clams haven’t opened beforehand, add them to the pot together with the shrimp at this stage).
- 4
Then add the light cream and coconut milk, continue to bring to a boil while stirring evenly.
- 5
Finally, add the clams and diced green and red peppers, season with an appropriate amount of salt according to taste, and turn off the heat.
