Soy Sauce Stir-Fried Shrimp
Shrimp flash-fry at fierce heat with umami-rich Weijixian soy sauce, an ultra-quick technique that locks in bouncy texture while a glossy savory glaze clings to every shell.
Instructions
- 1

Remove the shrimp's rostrum and whiskers, wash them clean, and pat dry with kitchen paper;
- 2

Place the shrimp in a bowl, add 2 tablespoons of cornstarch, 1/3 teaspoon of salt, 1/3 teaspoon of pepper, and 1 teaspoon of brandy, mix evenly, and let the shrimp fully absorb the seasoning;
- 3

After marinating, place on a plate and let sit for about 20~30 minutes;
- 4

Slice the shallots, and mince the garlic and ginger.
- 5

Put the sauce ingredients into a bowl and mix evenly.
- 6

Heat the pan and add some oil, spread the shrimp evenly, lightly pan-fry both sides until just cooked, then remove.
- 7

Put oil in the pan, add the ingredients, and stir-fry until fragrant;
- 8

Stir-fry over high heat for a moment;
- 9

Pour in the sauce, toss quickly to coat evenly, and transfer to a plate.
