Soybean and Winter Melon Pork Rib Soup
A Cantonese pressure-cooked soup of pork shoulder bones, soaked soybeans, winter melon and carrot, delivering a clear, subtly sweet broth that is light yet deeply savory.
Instructions
- 1

Prepare fan bones, soybeans (soaking them in advance can shorten the soup cooking time), winter melon (scrub the skin with salt), carrots, and ginger.
- 2

Put the fan bones in the pot and boil for two minutes.
- 3

While the pot is boiling, remove the seeds from the winter melon and cut it into pieces, cut the carrot into pieces, and crush the ginger.
- 4

After cooking the fan bones, rinse them to remove the scum.
- 5

Put the fan bones, soybeans, carrots, and ginger pieces into the electric pressure cooker, add an appropriate amount of water, and start making the soup.
- 6

Add the winter melon and continue to simmer.
