Special Braised Pork Rice

Special Braised Pork Rice

A luxurious braised pork rice built on slow-simmered pork hock broth, crisp cornstarch-dusted fried shallots, and tender potatoes and carrots, layering deep meaty richness over steamed rice.

Instructions

  1. 1
    Step image

Add pork knuckle, water, ginger slices, and green onions, and cook for two hours (I forgot to take photos of the cooking process such as skimming off the foam and straining the broth).

  2. 2
    Step image

    Cut the potatoes into pieces.

  3. 3
    Step image

    Cut the carrots into cubes.

  4. 4

Be sure to use these small onions.

  5. 5
    Step image

    Cut into small cubes.

  6. 6
    Step image

    Add cornstarch.

  7. 7
    Step image

Mix evenly so that every piece of green onion is coated with cornflour.

  8. 8
    Step image

Heat the pan and pour in oil.

  9. 9
    Step image

    Onion pieces coated with cornmeal.

  10. 10
    Step image

    Don't rush to stir-fry.

  11. 11
    Step image

Wait until one side turns yellow before stirring and frying.

  12. 12
    Step image

    Observe the color.

  13. 13
    Step image

    Deeper and deeper.

  14. 14
    Step image

Slightly a little burnt. I call it Onion Crisp.

  15. 15
    Step image

That's fine like this. Set aside for later.

  16. 16
    Step image

Cut a piece of pork knuckle and let it cool.

  17. 17
    Step image

Cut into large cubes. If you want a better appearance, freeze in the refrigerator for an hour before cutting.

  18. 18
    Step image

Prepare two more small onions and dice them.

  19. 19
    Step image

Heat the pan and pour in oil.

  20. 20
    Step image

    Sauté the onions.

  21. 21
    Step image

    Add carrots.

  22. 22
    Step image

    Add potatoes.

  23. 23
    Step image

Add pork knuckle soup. (During the cooking process of pork knuckle soup, you must skim off a lot of oil)

  24. 24
    Step image

Add seafood soy sauce, dark soy sauce, and salt.

  25. 25
    Step image

    Add rock sugar.

  26. 26
    Step image

Cover and simmer for 5 minutes.

  27. 27
    Step image

Because the pork knuckle has already been cooked for 2 hours, the pork knuckle meat should be added later.

  28. 28
    Step image

    Add the sautéed crispy onions.

  29. 29
    Step image

Cover with a lid and simmer on low heat for another ten minutes. It's done when the potatoes are soft.

  30. 30
    Step image

Add the freshness of vegetables before taking it off the stove.

  31. 31
    Step image

    Plate the dish.

  32. 32
    Step image

    Let's start eating!
