Special Spicy Sauce
Diced lotus root is slow-fried into fragrant bean paste with ginger, scallion, and five-spice, then layered under chili powder for a textured, slightly crunchy hot condiment.
Instructions

- 2

Peel the lotus root, wash it clean, and finely chop it for later use.
- 3

Chop the green onions and ginger into fine pieces.
- 4

Add oil to the wok (more than you would for stir-frying), and sauté the scallions and ginger over low heat until fragrant.
- 5

Add the doubanjiang and stir-fry over low heat until fragrant.
- 6

Add the sliced lotus root and stir-fry for 5 minutes.
- 7

Add five-spice powder and stir-fry evenly.
- 8

Scoop the cooked sauce into a large bowl.
- 9

Sprinkle chili powder over the sauce.
- 10

Add almonds and sesame seeds.
- 11

Use another pan, pour in the oil and heat it (the oil temperature should be about 70% hot)
- 12

Pour hot oil over the chili powder and stir well.
