Spicy Cabbage Fried Rice
Tangy, spicy fried rice studded with chopped kimchi, fluffy eggs and scallions; the fermented cabbage brings bright acidity and heat that perks up plain leftover rice.
Instructions
- 1

Boxed rice (I always feel that the rice from the cafeteria tastes better when made into fried rice).
- 2

Fry 3 eggs until cooked.
- 3

Bag of spicy cabbage.
- 4

I personally feel that having more kimchi stems makes it taste better.
- 5

Cut the spicy cabbage into small cubes (you can also use kitchen scissors, so you don't have to wash the cutting board 😁).
- 6

Spray an appropriate amount of oil into the pan and sauté the chopped green onions until fragrant (you can add minced garlic if you like).
- 7

Stir-fry the rice until it is loose.
- 8

Add the eggs and stir-fry evenly.
- 9

Add the spicy cabbage and stir-fry evenly (add some salt according to personal taste, or skip it if you prefer a lighter flavor).
- 10

Stir-fry evenly until the flavors are absorbed.
