Spicy Cucumber
Cucumbers and green chilies are salted for a full day, then submerged in a simmered soy-based brine. Expect crisp bites laced with savory, spicy depth.
Instructions
- 1

Wash the cucumber and green chili pepper and let them air dry.
- 2

Cut the cucumber lengthwise and then into sections, set aside.
- 3

Place the cucumbers in a clean, dry bowl and sprinkle in fine salt.
- 4

Put the sliced cucumber into the bowl, sprinkle with fine salt, and after marinating for 24 hours, pour out the water.
- 5

Air-dry the green chili peppers, then slice them and put them into a small bowl containing cucumbers.
- 6

Pour soy sauce into the pot, using an amount just enough to cover the marinated vegetables.
- 7

Pour in an appropriate amount of white sugar.
- 8

Add star anise and cinnamon, bring to a boil over high heat, and let cool.
- 9

Slice the ginger and garlic thinly and mix them into a small bowl containing the cucumbers.
- 10

Start another pan of oil and heat the oil.
- 11

Pour the oil into the cooled soy sauce broth.
- 12

Pour the drained marinade into the bowl with cucumbers (it can be eaten after marinating for a week).
