Spicy Dipping Sauce Oat Noodles
Oat flour dough scalded with boiling water, pushed into small curls and steamed, then dipped in numbing-spicy mala sauce, chewy, earthy and fiery.
Instructions
- 1

Knead the oat flour into a dough with boiling water (adding a small amount at a time) until it reaches the right firmness (able to form small lumps without sticking to your hands).
- 2

Take a small piece and place it on the cutting board. Use the palm of your hand to push it from bottom to top into a thin slice, then roll it into a small coil with your index finger.
- 3

After rolling, place them in the steamer in order, and steam for 5-6 minutes once the water boils.
- 4

After steaming, place it on a plate.

Spicy and numbing dipping sauce inspiration: minced green onions, minced garlic, white sesame seeds, diced celery, chili powder, poured with hot oil infused with Sichuan peppercorns to release the aroma, then add an appropriate amount of premium soy sauce, fragrant vinegar (or aged vinegar), salt, sugar, flaxseed oil, and sesame oil (blended oil), and mix thoroughly (adjust ingredients and quantities according to personal taste).
- 6

Add an appropriate amount of mutton eye bone broth and stir evenly, it smells so good!
