Spicy Pickled Cucumber Strips
Thick cucumber shreds marinate with bird's-eye chili and minced garlic, then get a brief sizzle in hot oil with soy sauce. Warm, garlicky, and sharp all at once.
Instructions
- 1

Wash the root cucumber and cut it into thick shreds (not too fine)
- 2

Cut the bird's eye chilies into small sections, and mince the garlic cloves.
- 3

Add minced garlic, chopped chili peppers, and salt to the shredded cucumber
- 4

Stir evenly with chopsticks and marinate for 2-3 hours
- 5

After marinating, drain the water
- 6

Add 2 tablespoons of vegetable oil to the pan and heat the oil until it reaches about 70% of its smoking point.
- 7

Pour the drained marinated cucumber shreds into the pan, add a spoonful of soy sauce, and stir-fry for 2 minutes.
- 8

Take it out of the pot and plate it; the fragrant, crispy, and appetizing shredded pickled cucumbers are ready (they taste even better when cooled or refrigerated!)
