Spicy Pomelo Peel
Pomelo season leaves behind plenty of peel, and this recipe turns that fragrant waste into a spicy, chewy snack worth making on its own merits.
Instructions

It's winter, and it's the season for eating pomelos again. Pomelos are delicious, and don't waste the pomelo peel either. Making spicy and fragrant pomelo peel is even more delicious!

Step one, peel the pomelo. First, use a fruit knife (a slightly larger knife works better) to score the pomelo skin into an octagon shape (four cuts are enough). Then remove a piece from the bottom to check the thickness of the pomelo skin. You can also skip this step and just peel along the lines made by the knife.

Use a kitchen knife to slice the pomelo peel into thin pieces. The following steps are very important: 1. Add clean water to a pot and bring it to a boil, then put in the pomelo peel. After the water boils, keep it under 3 minutes to avoid overcooking. 2. When the water cools down a bit (so it's not hot to the touch), take out the pomelo peel and squeeze out the water by hand. Use a container to rinse the removed pomelo peel with clean water 4-5 times, and remember to squeeze out the water by hand each time you take it out.

Chop the garlic a little finer, and add chili and salt according to personal taste. Mix well. When eating, stir-fry it in a pan, using a little cooking oil and a little water, making sure not to produce too much liquid. Cover and simmer for a while. Then it's ready to eat. Since the pomelo peel itself has a special flavor, this dish has a very unique taste. For friends who are patient and willing, spicy tangerine peel tastes even better!
