Spicy Potato Slices in Flatbread

Spicy Potato Slices in Flatbread

Fluffy yeasted flatbreads are split and packed with blanched potato slices tossed in chili oil and spices, the iconic Xi'an-style street sandwich.

Instructions

  1. 1
    Step image

Put the flour into a bowl and add the yeast powder.

  2. 2
    Step image

Slowly add water and stir the flour into a flaky consistency.

  3. 3
    Step image

Knead into a dough; it doesn't need to be particularly smooth.

  4. 4
    Step image

Cover with plastic wrap and let it rest.

  5. 5
    Step image

Let the dough ferment until it is 1.5 times its original size and has a honeycomb-like texture inside.

  6. 6
    Step image

Take the dough out, sprinkle with flour to prevent sticking, and knead to remove the air.

  7. 7
    Step image

Roll the kneaded dough into long strips and cut them into equal portions.

  8. 8
    Step image

Flatten the dough and roll it into thin pancakes, slightly larger than usual.

  9. 9
    Step image

The electric griddle can be heated without adding oil, or you can lightly brush a little, then place the dough to cook until done.

  10. 10
    Step image

Stir the sesame paste with warm water until it dissolves, making sure to add the water in small amounts repeatedly.

  11. 11
    Step image

Prepare the seasoning powder as shown in the picture.

  12. 12
    Step image

Put oil in the pot, add star anise, cinnamon, bay leaves, and Sichuan peppercorns, fry slowly over low heat until fragrant, then remove the spices.

  13. 13
    Step image

Pour the hot oil into the prepared seasonings and stir evenly.

  14. 14
    Step image

Add light soy sauce, oyster sauce, chicken bouillon, and salt.

  15. 15
    Step image

Pour in the mixed sesame paste as well.

  16. 16
    Step image

Stir well, and the sauce will be ready.

  17. 17
    Step image

Peel the potatoes, wash them clean, and cut them into thin slices.

  18. 18
    Step image

Rinse the sliced potatoes twice to wash off the surface starch.

  19. 19
    Step image

The potato slices I cut are relatively thin, and they are about done when they turn transparent in the pot. At this time, the texture is crispy; if cooked too long, they will become doughy and the texture won't be pleasant.

  20. 20
    Step image

Take it out and drain it dry.

  21. 21
    Step image

Blanch the beancurd sheets again until cooked, then remove and drain.

  22. 22
    Step image

Pour into the seasoning bowl and stir, coating completely with the sauce.

  23. 23
    Step image

Prepare the side dishes according to your own preference.

  24. 24
    Step image

Cut open the middle of the pancake, stuff the side dishes in layer by layer, add until it’s overflowing, haha 😄

  25. 25
    Step image

The side dishes are abundant, the flavors are rich, super satisfying!
