Spicy Stir-fried Eggplant
Steamed eggplant is pounded together with charred tiger-skin peppers, garlic and century egg, a Hunan-style mash where smoky heat melts into silky, spoonable softness.
Instructions
- 1

Wash the seasonal eggplants and cut them into strips, then steam them in a steamer for about 20 minutes until cooked.
- 2

Add a little oil to the pan, fry the green peppers until the skin is blistered like a tiger's, then add the minced garlic and stir-fry briefly. After that, take it out of the pan and put it into a bowl.
- 3

Crush the garlic and green peppers a little in a bowl, then add Supreme Soy Sauce, salt, white vinegar, sugar, sesame oil, and chopped green onions for seasoning. Add the century egg and mash it in to absorb the flavors.
- 4

Then put the steamed eggplant in and mash it with a rolling pin to let it absorb the flavors.
- 5

You can eat it now, it tastes pretty good. Early summer flavor.
