Spicy Tofu Bun
A numbing-spicy steamed bun stuffed with steamed tofu cubes, glass noodles, and chili oil infused with star anise and cinnamon for a bold, aromatic filling.
Instructions
- 1
Cut the tofu into thick slices and place them in the Meiyu steam oven at 100 degrees to steam for 10 minutes, removing the beany taste and increasing firmness.
- 2
Cut into small cubes and put them in a bowl.
- 3
Add the cooked and chopped vermicelli.
- 4
Add an appropriate amount of chili powder, Sichuan pepper powder, chopped scallions, and minced ginger, and set aside.
- 5
Soak the star anise, bay leaves, cinnamon, and tsaoko in advance.
- 6
Add an appropriate amount of oil to the pan, put the soaked spices into the cold oil, and fry on low heat until fragrant.
- 7
Scoop out the residue, wait for the oil temperature to rise, and pour it into the filling.
- 8
Mix evenly, then add salt and MSG to season.
- 9
Mix again, and the filling is ready.
- 10
Mix all the dough ingredients and knead into a smooth, proper dough. Cover with plastic wrap and let it rest for 5 minutes.
- 11
Divide the dough into portions and roll them into round pieces.
- 12
Wrap in the filling.
- 13
Tighten the medicine container cap.
- 14
Place them in the Meiyu steam oven one by one after finishing, and let them ferment until doubled in size.
- 15
Steaming for 16 minutes is sufficient.
