Spring Seasonal Fresh Elm Bud Nests
Fresh elm seeds are mixed into a lightly salted dough, shaped into thumb-holed cones, and steamed just minutes to keep their jade-green color and delicate, grassy sweetness.
Instructions
- 1
Fresh elm buds (washed and stems removed), an appropriate amount of flour.
- 2
A pinch of salt, a tiny bit of baking soda (to make the color green), 2 grams of Thirteen Spices in warm water.
- 3
Mix and knead into a slightly firmer dough (add small amounts of water gradually as needed).
- 4
Rub some oil on your hands, take about 60 grams of dough, roll it into a ball in the palm of your hand, and then use your thumb to make a hollow at the bottom (to steam it through easily).
- 5
Line the steamer basket with a silicone steaming cloth or brush with oil, and place the pieces apart to prevent sticking.
- 6
After the water boils, steam for 13 minutes, then turn off the heat and let it sit for 2 minutes.
- 7
Soul Garlic Paste Preparation: Crush garlic, 2 tablespoons soy sauce, 1 tablespoon vinegar, a little sesame oil.
- 8
It tastes so good that I’m dazed…

While the elm seeds are still swaying on the branches, quickly bring spring to the table!
