#SpringEatsWildVegetablesFragrant# Breakfast Shepherd's Purse Pancake
A spring breakfast pancake: batter whisked with egg, salt and raw chopped shepherd's purse, pan-fried into tender rounds that keep the wild green's fresh, faintly sweet aroma.
Instructions
- 1

Gather together in one place.
- 2

Cold water, sift and add flour, then stir evenly clockwise. Do not add the flour directly, otherwise it will clump and be difficult to handle. If there is no sieve, add the flour first, then turn on the tap and add water slowly while stirring quickly as you add.
- 3

Add eggs and salt, and stir into a smooth batter.
- 4

Add the chopped shepherd's purse and mix well. Do not blanch the shepherd's purse, otherwise the aroma will be diminished.
- 5

Add an appropriate amount of oil to a frying pan, use low heat, and pour in the batter once it is slightly hot. Use a stainless steel spatula to spread the batter evenly to the sides. This is a skillful task that improves with practice.
- 6

Pan-fry over low heat; 5 minutes is enough if you like it soft, about 8 minutes if you like it crispy. If you want it faster, just turn the heat up a bit.
- 7

Front.
- 8

On the other side, one side is crispy and the other is soft and tender, with the fresh fragrance of shepherd's purse and the savory taste of eggs. Paired with a cup of hot milk, it's a delicious and healthy breakfast.
