Steamed Egg with Clams Exclusive
An elegant steamed custard where purged clams sit beneath a silky 1:1 egg mixture, steamed covered over medium heat so the eggs set delicately and soak up briny clam sweetness.
Instructions
- 1

Crack two eggs into a bowl and beat them with a whisk.
- 2

Add an equal amount of cold water to the beaten eggs.
- 3

After the cleaned clams are added to boiling water, cook them until they open, then take them out.
- 4

Place the scooped clams onto a plate.
- 5

Pour in the beaten egg mixture.
- 6

Add water to the pot and place a steaming rack inside. Put the plate in the pot and cover it with another inverted plate, or you can wrap it with plastic wrap and poke a few holes with a toothpick. Steam over medium heat for 15 minutes.
- 7

Sprinkle with chopped green onions and drizzle a little soy sauce before serving.
- 8

After the green onions were picked out, they were added to the finished product 😂.
