Steamed Egg with Silken Tofu
A delicate steamed custard of beaten egg and silken tofu steamed over low heat with shrimp and scallion, prized for its smooth, trembling, spoonable texture.
Instructions
- 1
3 eggs, 1 yuan of tofu. A few krill, a piece of green onion.
- 2
Cut the tofu into thin slices. Chop the green onions into fine pieces. Crack the eggs into a bowl, beat them, and it's best to add cooled boiled water; the amount of water should be twice the volume of the eggs. If there is no cooled boiled water, just use cold water. Add an appropriate amount of salt to the eggs.
- 3
Put tofu into the eggs and steam it in a steamer until cooked. When steaming the eggs, start with high heat to boil and then switch to low heat. Steam for ten minutes, then you can open the lid to check. Use chopsticks to prick it; if it's not cooked, egg liquid will flow out of the holes, and if not, it is cooked.
- 4
Sprinkle a little sesame oil, chopped green onions, and krill on the steamed egg tofu.
- 5
Finished product image. The egg tofu is fused into one, tender and fragrant.
