Steamed Orange Goji Berry Egg
A charming steamed egg custard cooked inside a hollowed orange shell, the custard sweetened with fresh orange juice and goji berries for a citrusy, silky dessert.
Instructions
- 1
Wash the oranges and dry them, place them on the table, and gently rub them by hand for 2 minutes to make the pulp easier to separate.
- 2
Cut the orange at the 1/4 mark. Use a stainless steel spoon to scoop out the flesh inside the orange, leaving the intact spherical orange peel container and its small lid.
- 3
Squeeze out the orange juice and set it aside.
- 4
Take 15g of orange juice and add 5g of sugar, stirring until dissolved.
- 5
Beat the eggs. Pour the orange juice into the egg mixture and stir well.
- 6
Add 15g of milk (at room temperature) and mix well. Strain through a sieve to remove impurities.
- 7
Place the orange into a small bowl, and pour in the milk-orange egg mixture until it is 80% full.
- 8
Sprinkle in the cleaned goji berries, cover with plastic wrap (I cover it with the orange lid, ideally: wrap the surface with plastic wrap and poke a few holes with a toothpick).
- 9
After the steamer water boils, put the oranges in, cover, and steam over medium heat for about ten minutes (leave a small gap at the edge of the pot to prevent water vapor from flowing back and affecting the final product).
