Steamed Salted Fish
Soaking tames the saltiness of dried fish before a gentle steam with scallions, ginger and an unexpected twist of orange peel that lifts away any fishy notes.
Instructions
- 1
Soak the dried salted fish in cold water for 20 minutes, changing the water once midway to remove some of the salt.
- 2
Wash the soaked salted fish and cut it into appropriately sized pieces.
- 3
Prepare the ingredients. I used scallions, ginger, garlic, cilantro, dried red chilies, and fresh red chilies. In addition to these common ingredients, I also specially used tangerine peel, which I highly recommend. Adding tangerine peel not only helps remove the fishy smell of salted fish but also gives a very special fragrance.
- 4
Heat oil in a pan, and once the oil is hot, add scallions, ginger, and chili to stir-fry until fragrant
- 5
Next, put the chopped salted fish into the pan and stir-fry.
- 6
Then add a tablespoon of yellow wine (you can use cooking wine as a substitute here, but the aroma of yellow wine pairs better with the rich taste of salted fish, making the flavor even better)
- 7
Add a teaspoon of white sugar
- 8
At the same time, add a small amount of chicken essence
- 9
Finally, add a spoonful of braised sauce mixed with light soy sauce and vinegar, in the ratio of 1:1 for braised sauce and light soy sauce, with just a few drops of vinegar.
- 10
Finally, place the fried salted fish on a plate, top with orange peel, and steam for 10 minutes.
