Sticky Rice Dumpling
Chewy Northeastern-style sticky dumplings of black rice, glutinous rice, and red beans packed with walnuts, red dates, and dried fruit, steamed into dense, sweet, wholesome parcels.
Instructions
- 1

I used black rice, black glutinous rice, white glutinous rice, and red beans with peanuts, soaked for a day. Wash the raisins and dried cranberries clean, and chop the red dates. Peel the walnuts.
- 2

Wash the walnuts clean and steam them for ten minutes, then rinse with cold water. The walnuts will remain whole when shelled, which prevents nutrient loss during blanching.
- 3

Boil walnuts in water with white vinegar for one minute, then cool and drain the water. This way, the walnut skins won't have a bitter taste.
- 4

Steam the mixed grain rice, then add an appropriate amount of glutinous rice flour and your favorite nuts.
- 5

Shape the rice balls well, roll them on glutinous rice flour, then dip them in cold water and coat with glutinous rice flour again, repeating several times. If you find it troublesome, you can directly wrap them with dumpling wrappers.
- 6

Steam in the oven at 100°C for 25 minutes. It's done. You can also use a steamer.
- 7

This was just wrapped using dumpling wrappers.
- 8

Minutes, take out of the pot.
