Stir-Fried Beef Ho Fun
The Cantonese classic of wide rice noodles wok-fried with velvety beef, egg, and aromatics in a soy-oyster sauce, demanding searing heat for smoky, silky, strand-separating wok hei.
Instructions
- 1

Cut the scallions and yellow chives into sections, and shred the onions and carrots.
- 2

Pour two spoonfuls of Donggu Jin Zhuang Golden Label Light Soy Sauce, one spoonful of Donggu Baiwei Fresh Oyster Sauce, half a spoonful of Donggu Straw Mushroom Dark Soy Sauce, one spoonful of sugar, and a little less than half a bowl of water into an empty bowl.
- 3

Heat oil in a pan, add the beef and stir-fry until cooked, then remove and set aside.
- 4

Start another pan with oil, pour in the eggs and cook them, then use a spatula to cut them into small pieces.
- 5

Heat oil in the pan again, add shredded onions and shredded carrots and stir-fry until soft. Add the rice noodles and stir-fry for two minutes.
- 6

Pour in a little water and reduce to low heat, then add the onion, green onion, egg, and beef, and stir-fry evenly.
- 7

Pour in the prepared sauce, turn the heat to high, and stir-fry until the rice noodles are slightly charred, then they can be taken off the heat.
