Stir-fried Eggs with Dried Tofu and Malantou
Tender malantou greens are chopped fine and tossed with diced dried tofu and crumbly scrambled egg. A beloved spring side dish where herby bitterness meets nutty, savory comfort.
Instructions
- 1

Pick the tender shoots of Malantou and wash them clean.
- 2

Cut the dried tofu into small cubes.
- 3

Minced garlic.
- 4

Put water in a pot and bring it to a boil, add a little salt and oil, then blanch the Malantou.
- 5

Rinse with cold water.
- 6

Squeeze out a little water. (No need to squeeze it too dry)
- 7

Chop slightly.
- 8

Add a little oil to the pan, crack in the eggs, and stir constantly with a spatula or chopsticks, scrambling the eggs into small pieces. Set aside.
- 9

Add a little more oil to the pan, and sauté the minced garlic until fragrant.
- 10

Add the diced dried tofu and stir-fry for 1-2 minutes.
- 11

Turn off the heat and add the Malantou.
- 12

Add the eggs, oyster sauce, aged vinegar, sugar, and a pinch of salt.
- 13

Just mix quickly.
- 14

Fragrant fresh vegetables.
