Stir-fried Pickled Vegetables with Pork Lard Crumbs
Crispy pork fat renderings lend smoky richness to sour pickled greens in this humble stir-fry. A little sugar and soy balance the aggressive tang beautifully.
Instructions
- 1
First, soak the pickled vegetables in clean water and wash them thoroughly, then squeeze out the water and chop finely.
- 2
Chop the garlic into paste and finely chop the green onions for later use;
- 3
Cut the fatty pork into small pieces, first fry on low heat to render the fat, then add minced garlic and shallots to sauté until fragrant;
- 4
Pour in the pickled vegetables and stir-fry evenly;
- 5
Add a little light soy sauce during the process, and season with one teaspoon of sugar, stir-fry evenly;
- 6
Just add chopped green onions before putting it on the stove!
