Stir-fried Pork Slices with Young Ginger
Young ginger shoots, milder and juicier than mature root, flash-fry with thin pork slices into a zingy, warming seasonal stir-fry cherished for its bright, peppery freshness.
Instructions
- 1

Slice the pork belly thinly, then mix with salt, cooking wine, light soy sauce, and cornstarch slurry, and marinate for 10 minutes.
- 2

Chop the green onions, garlic, and chili peppers and set them aside.
- 3

Peel and wash the young ginger.
- 4

Cut into thin slices.
- 5

Heat a cold pan with cold oil, add the meat slices and stir-fry until they change color, then add the white parts of the green onions, garlic, and chili.
- 6

Add the young ginger and stir-fry for a few minutes.
- 7

Sprinkle in the chopped green onions and add an appropriate amount of salt, then stir-fry evenly.
- 8

Without the spiciness of old ginger, it is crisp and delicious.
