Strawberry gummy
Strawberry puree is boiled with corn syrup, sugar, lemon juice, and butter, then cooked down with a starch slurry, setting into chewy, glossy homemade gummies bursting with bright berry flavor.
Instructions
- 1

Wash the strawberries, remove the stems, and mash them into a puree. Add 550g of corn syrup and 150g of granulated sugar to the fruit puree, and cook over medium heat while stirring until it boils.
- 2

After boiling, add 40g of lemon juice and 20g of butter, stirring constantly.
- 3

After the butter has completely melted, reduce to low heat and cook for 20 minutes, stirring once every two minutes.
- 4

Mix 75g of corn starch with 75g of water evenly, then slowly pour in the corn starch while stirring the pot.
- 5

Simmer and stir-fry over medium heat. After adding the starch, be sure to keep stirring; otherwise, it will burn at the bottom. Stir-fry until there is almost no moisture, the mixture forms clumps without being loose, and it hardly sticks to the spatula, which takes about an hour.
- 6

Place it in the mold and press flat while hot, lining the mold with parchment paper and covering with parchment paper.
- 7

After cooling overnight.
- 8

Cut into pieces.
- 9

Bagging.
