Sweet Fermented Rice and Osmanthus Glutinous Rice Ball Soup
A sweet dessert soup of hand-rolled glutinous rice balls floating in boozy-sweet fermented rice wine, scented with osmanthus and lightly thickened to a silky, comforting finish.
Instructions
- 1

Pour glutinous rice flour into a bowl, add 100 grams of boiling water, stir with chopsticks, let it cool slightly, and knead into a dough.
- 2

Roll into long, thin strips.
- 3

Cut into small glutinous rice balls with a knife.
- 4

Prepare the fermented rice wine and sweet osmanthus.
- 5

Add a bowl of water to the pot and bring it to a boil. Pour in the fermented rice and break it up. Add the glutinous rice balls and osmanthus-flavored sugar, bring to a boil, and simmer for a while.
- 6
When the small glutinous rice balls float, add a little water-starch slurry to thicken and then take it off the heat.
