Sweet Potato Steamed Cake
A naturally golden steamed sponge cake made from sweet potato puree, rice and wheat flours, and yeast, rising tall and airy with a springy, mildly sweet crumb.
Instructions
- 1

Peel the sweet potato and slice it.
- 2

Place it in the steamer and steam until cooked.
- 3

Pour into a blender, add 80 grams of white sugar and 300 grams of water, and blend into a smooth sweet potato juice.
- 4

Pour into a large bowl, and after it cools to a warm temperature that is not hot to the touch, add 4 grams of yeast.
- 5

After mixing evenly, add 150 grams of tapioca starch and 250 grams of all-purpose flour. Then mix evenly again.
- 6

Cover and start letting the dough rise.
- 7

After the dough has risen to twice its size, add 20 grams of cooking oil and 3 grams of baking powder, then continue to mix evenly.
- 8

First, brush oil on the mold, then pour in the batter. Stir with chopsticks to allow large air bubbles to escape fully. If there are large air bubbles on the surface, use a toothpick to pop them.
- 9

Let it rise until it is 1.5 times larger, then put it into a steamer, cook on high heat for 40 minutes, turn off the heat and let it steam for another 5 minutes before taking it out.
