Sweet Potatoes Dried by Three Steaming and Three Sun-Drying
Sweet potato slabs are repeatedly steamed and sun-dried through three cycles, concentrating natural sugars into a dense, chewy, amber-toned dried fruit snack with deep caramel flavor.
Instructions
- 1

Wash and peel the sweet potatoes. Since they were just dug out of the ground, the skin only needed a gentle scrape to come off, so I didn't use a peeler, but instead just wiped it off gently with a dishcloth.
- 2

Cut the sweet potato into the desired length and thickness. If you cut it thin, it will have a chewy texture when dried; if you cut it thick, it will be easier to bite.
- 3

In the first steaming, spread the sweet potatoes flat on the steamer tray, bring the water to a boil over high heat, and then steam for 20 minutes. If the time is too long, the cooked sweet potatoes will be difficult to take out.
- 4

The curling cooking smoke comes out from this big stove, and the grass being burned is also the bean stalks from our own field. This is definitely authentic rural cuisine!
- 5

Place the steamed sweet potato slices on a drying net. Using this kind of drying net is especially convenient, and importantly, it can keep flies and insects away. The first drying needs two days for the outer skin to be free of moisture.
- 6

Steam on high heat for half an hour after bringing the water to a boil the second time.
- 7

Just put it on the drying rack and let it sun for a day.
- 8

For the third steaming, boil the water over high heat and then steam for another half hour.
- 9

Place it on the drying rack to dry for a day.
