Taiwan 'Braised Pork Rice'!
Taiwanese braised pork rice featuring diced pork belly fried until fatty and golden, then simmered with fried shallots, soy, rice wine, and rock sugar into a glossy, deeply savory sauce.
Instructions
- 1
Cut the pork belly into small cubes of about 1 centimeter, and chop the onion and garlic separately (if you use dried shallots instead of onion, the flavor will be even richer).
- 2
Start by putting onions in the pan and fry slowly over low heat until they change color.
- 3
Add the minced garlic again.
- 4
Simmer on low heat until golden yellow, then pour out and filter to remove the oil.
- 5
Pour the pork belly into the original pot and stir-fry until the oil comes out.
- 6
Add soy sauce, yellow wine, and rock sugar.
- 7
Stir-fry until the rock sugar melts, then pour in boiling water to cover the ingredients, add salt, and bring to a boil.
- 8
Transfer into a clay pot, add the fried fragrant green onions, garlic, and star anise.
- 9
Cover and simmer on low heat for 45 minutes to 1 hour, then it is ready to enjoy.
- 10
The aroma is strong when the lid is opened.
- 11
The color is enticing.
- 12
The taste is rich and fragrant.
