Tangzhong toast, so fluffy and stretchy you won't have any friends, fragrant and soft, insanely delicious.
Tangzhong toast brings high-gluten flour, milk and high-gluten flour together and is baked until golden and fragrant.
Instructions
- 1

First, we make the tangzhong batter. Take 20 grams of high-gluten flour and 100 grams of milk, mix evenly, then slowly heat over low heat while stirring until it becomes a paste.
- 2

Cover the surface of the tangzhong batter with plastic wrap and let it cool completely.
- 3

Then mix 60 grams of milk, 15 grams of milk powder, 1 egg, 40 grams of white sugar, and 3 grams of salt evenly.
- 4

Then add the tangzhong batter and 250 grams of bread flour, and mix them together.
- 5

Stir until a coarse film appears.
- 6

Mix 4 grams of yeast with a little water into a paste, then add it to the dough.
- 7

Then add 25 grams of unsalted butter softened to room temperature, and continue to mix.
- 8

Until a thin glove-like membrane is formed from stirring.
- 9

Take out the dough, evenly divide it into 3 portions, wrap them with plastic wrap, and let them rest for 10 minutes.
- 10

Take a piece of dough, roll it out long and thin, roll it up from one end, and place it with the seam side down.
- 11

Handle each one this way, wrap it with plastic wrap, and let it relax for another 10 minutes.
- 12

Take a well-rested dough, stand it up with the seam facing up, continue to roll it long and thin, then roll it up from one end.
- 13

Place the dough seam side down into the toast pan.
- 14

Perform all the operations, put it in the oven to ferment, at a temperature of 35℃ and humidity of about 80%.
- 15

Ferment until 80% full. (Note: You can place a bowl of hot water in the oven to help with fermentation.)
- 16

Take out the well-fermented dough and brush the surface with a layer of milk or egg wash.
- 17

Preheat the oven to 170°C and bake for about 30 minutes. Note: After the surface has browned, covering it with a sheet of aluminum foil can prevent it from getting too burnt.
- 18

While it's hot, brush a layer of melted butter on the surface, it will look even better.
- 19
