Taro and Pork Rib Rice
Pan-seared pork ribs and diced taro braised in dark and light soy sauce, then steamed together with rice for an aromatic one-pot meal with creamy, starchy taro.
Instructions
- 1

Blanch the pork ribs, add ginger and cook together to remove the fishy smell.
- 2

Cut the taro into cubes.
- 3

Rinse the rice and soak it for a while, then cook it in an electric pressure cooker.
- 4

Drain the water from the ribs, add oil to the pan, and fry the ribs until fragrant, about two minutes.
- 5

Add the diced taro and stir-fry for two minutes.
- 6

Add salt, dark soy sauce, and light soy sauce, and continue to stir-fry for two minutes.
- 7

Reduce to low heat, cover with a lid, and braise for five minutes without adding water.
- 8

Turn off the heat and serve.
- 9

Fluff the cooked rice, pour in the pork ribs and taro, and mix evenly with a rice spatula.
- 10

Use the electric pressure cooker to boil once more after opening.
- 11

If you flip it halfway through, there will be delicious crispy rice.
