Tea Tree Mushroom and Old Duck Soup
A deeply savory soup of overnight-soaked tea tree mushrooms and blanched old duck simmered with ginger until the broth turns rich, earthy, and fortifying.
Instructions
- 1

Prepare duck meat and soaked tea tree mushrooms (soak the tea tree mushrooms the night before).
- 2

Boil water in a pot, add ginger slices and knotted scallions, then add the duck meat to blanch.
- 3

Boil for a while, then lift the duck meat and rinse it in cold water, cleaning it thoroughly.
- 4

Add an appropriate amount of water to the pressure cooker, and pour in the tea tree mushrooms and the water used to soak the tea tree mushrooms (when soaking the tea tree mushrooms, first wash the mushrooms, then soak them in water). Add ginger slices and put in the duck meat.
- 5

Cook in a pressure cooker for 40 minutes, add salt and chicken essence, and it's ready to eat.
