White-cut chicken depends on three key techniques, from gentle poaching to an ice bath, rewarding the cook with silky skin, juicy meat and a punchy ginger-scallion dip.
Instructions
- 1

Prepare the ingredients.
- 2

Clean all the ingredients thoroughly, slice part of the ginger and mince the remaining part, tie 2 scallions into knots, and chop 1 scallion finely.
- 3

Place the cleaned chicken into the pot, add slices of ginger and tied green onions, star anise, and cooking wine, then add an appropriate amount of water to cover the ingredients.
- 4

Prepare a basin of cooled boiled water or ice water, with enough water to cover the chicken.
- 5

Prepare the soul dipping sauce: 3 tablespoons of light soy sauce, 1 teaspoon of sugar, minced ginger and minced green onions, 1 teaspoon of sesame oil, 2 tablespoons of chicken broth.
- 6

After boiling, remove it after 1 minute and soak it in prepared ice water for 2 minutes; continue to boil the original water in the pot, then put the chicken in, turn off the heat after boiling for 3 minutes, and let it stew for about 15 minutes.
- 7

Take out the chicken and continue to soak it in ice water for about 3 minutes.
- 8

Scoop out and cut into pieces, then plate.
- 9

Sprinkle a little cilantro for garnish.
- 10

Dip it in the sauce, the tender, delicious, and flavorful poached chicken is so good that you could eat half of it in one go!
