Teriyaki Chicken Chop Rice
Boneless chicken thigh marinated and pan-seared, glazed with sweet teriyaki sauce and served over steamed rice for a glossy, savory meal.
Instructions
- 1

Prepare two chicken drumsticks of this size. It's best to buy fresh frozen ones; if you don't know how long they've been frozen, the texture will definitely be bad. I also soaked them for half an hour to remove the blood.
- 2

Chop off the bone on top with a knife.
- 3

I can easily remove the bone by running the eyebrow blade down along this bone.
- 4

Then use a toothpick to poke holes, this way it will absorb the flavor more easily when marinating.
- 5

Rinse the prepared chicken pieces again and put them in a large bowl. Add two tablespoons of sliced ginger, one tablespoon of cooking wine, a quarter teaspoon of pepper, one tablespoon of light soy sauce, and a little salt. Rub and knead repeatedly with both hands, cover with plastic wrap, and marinate for a few hours. It's even better to marinate them overnight in advance.
- 6

Let's mix the braising sauce: two tablespoons of cooking wine, one tablespoon of light soy sauce, one tablespoon of oyster sauce, a quarter tablespoon of dark soy sauce, a little more than half a tablespoon of honey, and add two tablespoons of water and mix evenly. Well, everyone's taste is different, so try it with your chopsticks yourself.

Put a little oil in a frying pan, slightly heat it, and put the marinated chicken thighs in to fry until golden. Don’t be too eager to turn them over. Cook on low heat so they won’t burn easily, about two minutes, then shake the pan to check.
- 8

Let me show you how beautifully it’s been pan-fried.
- 9

Flip and fry until golden brown.
- 10

Pour in the prepared teriyaki sauce and simmer over medium-low heat for a while.
- 11

You can poke the middle with a toothpick, and if there’s basically no blood, it’s done. [It’s best to flip it several times in the middle to make it more flavorful.]
- 12

It looks very tempting, doesn't it?
- 13

Take the pan-fried chicken out and cut it into even pieces to serve with fragrant rice. Actually, you can also add some vegetables, or blanched asparagus. I am an absolute carnivore, so I just served the meat on a plate.
- 14

Haven't had coffee in a long time, so I'll grab a cup and find a good show, a perfect weekend.

All our lives, we are just looking for someone to eat well with.
