The bun of roujiamo
The yeasted flatbread used for Chinese meat sandwiches, pan-baked until crisp outside and soft inside, then split and stuffed with chopped braised pork.
Instructions
- 1
Add 2 grams of yeast and 2 grams of salt to the flour, and mix well.
- 2
Add 100 ml of warm water and mix into a doughy texture, then add 10 ml of cooking oil and make it look like this ghostly mess 👻.
- 3
Move it onto a mat and knead it into a smooth dough. With this ratio of water to flour, and with the oil added, it won’t stick to your hands, so don’t worry everyone ❤
- 4
After kneading the dough, cover it with a lid and let it rise until it doubles in size, which is estimated to take 40 minutes. (There is no strict limit on rising time; it depends on the temperature in your home. If you want it to rise faster, you can place it on a heater. If the room is cold, place it above a basin of warm water. In short, you need to figure out the method yourself).
- 5
After the dough has risen, first knead it on the dough mat to release the air, then divide it into small portions. The exact size depends on your household's appetite. In short, if it's big, take a few more bites; if it's small, eat a few more pieces. There are no specific requirements.
- 6
Knead the dough into a shape that is thin at both ends and thick in the middle. Use a rolling pin to roll it into a slightly thinner sheet. Start rolling from one end, and when you reach the other end, press the tail end underneath, flatten it vertically, and then roll it into a round thin pancake. Set it aside and cover with plastic wrap for a second fermentation for 20 minutes.
- 7
Once the dough has proofed, preheat the electric griddle. There's no need to brush oil; just put it in directly. Basically, flip it twice, and when both sides change color, it's cooked.
- 8
Split it in the middle and stuff it with whatever you like.

I made the bread on the first night, and it wasn't hard in the morning. Heat it in the microwave for 20 seconds, stuff it with the leftover braised pork from last night, add some cilantro and green peppers, and the pork sandwich is ready! Or you can stuff it with fried eggs, ham, vegetables... you can put in whatever you like.
