Three Ji Brother Soup
A Hakka specialty soup of thinly sliced pork, intestine and liver marinated with beer and egg white, briefly poached with goji leaves for a tender, springy bite.
Instructions
- 1

Slice the pork thinly and add an appropriate amount of beer, salt, chicken powder, egg white, and cornstarch, then mix well and marinate for later use.
- 2

Cut the blood sausages into 3-centimeter long pieces, then marinate them with beer, salt, chicken powder, and baking soda and set aside.
- 3

Slice the pork liver thinly with a diagonal cut, rinse with tap water to remove the blood, drain the water, and then add a small amount of baking soda, salt, starch, egg white, beer, and oil. Mix well and marinate for later use.
- 4

Pick the leaves of the goji vegetable, wash them clean, and set aside.
- 5

Add an appropriate amount of broth and water to the pot and bring to a boil. First, add the vermicelli sausage and bring to a boil, then add the lean meat and pork liver and bring to a boil. Season to taste, add goji leaves, and serve hot.
