Three Sauce Beef

Three Sauce Beef

A cold-sliced beef shank appetizer that gets marinated overnight in seasoned soy sauce before slow simmering, producing firm, deeply flavorful slices often served chilled.

Instructions

  1. 1
    Step image

    Clean the bought beef shank.

  2. 2
    Step image

Wash clean and soak in cold water for 3 hours (change the water 3 times during the soaking).

  3. 3
    Step image

Pat the soaked beef shank dry with kitchen paper and add light soy sauce inside.

  4. 4
    Step image

Cover with plastic wrap and refrigerate overnight (turn the beef three times in the meantime for better flavor).

  5. 5
    Step image

Take a clay pot, put the beef shank that has been soaked overnight into it, and pour in the soy sauce as well.

  6. 6
    Step image

Add a little more cold water to cover the beef (because the beef will expand after heating).

  7. 7
    Step image

Prepare three sauces: soy sauce, sweet bean sauce, and fermented tofu.

  8. 8
    Step image

Prepare the seasonings: Sichuan pepper, star anise, bay leaves, cinnamon, tsaoko, hawthorn slices, dried tangerine peel, and dried chili peppers.

  9. 9
    Step image

    Ginger and onions.

  10. 10
    Step image

After the fire boils, skim off the blood foam.

  11. 11
    Step image

    Put all the seasonings in.

  12. 12
    Step image

Add the sweet bean sauce and mix evenly.

  13. 13
    Step image

Put the fermented tofu in and mix evenly.

  14. 14
    Step image

Then add the ginger and onion.

  15. 15
    Step image

Taste it, and if salt is needed, you can add it according to your personal preference.

  16. 16
    Step image

Cover with the lid and simmer on low heat for about 2 hours and 15 minutes.

  17. 17
    Step image

Turn off the heat. Use chopsticks to poke it; a little resistance is enough. Let the braised meat cool in the pot, and it will become firm.

  18. 18
    Step image

Look at it, how it makes you crave it.

  19. 19
    Step image

Does it look better after cooling?

  20. 20
    Step image

Refrigerate overnight, then slice thinly. Even without the sauce, it tastes very good.
