Tofu and Crucian Carp Soup—There is nothing he can't solve
Pan-seared crucian carp simmered in boiling water with scallion and ginger until the broth turns milky, then cooked with tofu cubes for a clean, delicate flavor.
Instructions
- 1

Prepare all the ingredients.
- 2

Rinse the crucian carp after gutting, scaling, and removing the gills (done by the fishmonger), then wash clean and pat dry. Lightly marinate with salt and cooking wine, and set aside. Cut the tofu into 1 cm thick pieces. Heat the pan, add a small amount of oil, place the crucian carp in, and fry until both sides are golden brown.
- 3

Add scallions and ginger, and pour in enough boiling water (about 4 bowls)
- 4

After the water boils, add the tofu and cook on high heat for 10 minutes.
- 5

The soup will turn snowy white, then switch to medium heat and simmer for 40 minutes. Add chicken bouillon, salt, and pepper.
- 6

The fish soup is so fresh it could make your teeth fall out.
